红甜菜根中甜菜红色素开发利用研究进展 被引量:7

摘要 红甜菜根作为蔬菜食用,我国现栽培品种多且引种来源杂,红甜菜根中甜菜红色素同时是一种可食用色素,被用于食品色素改善食品的外观。红甜菜根提取物含有多种生理活性物质,如甜菜红色素、多酚、黄酮以及有机酸等,具有抗氧化性、保护心脏、消炎和抗菌素效应等功能,具有一定的食用价值与药用价值。对红甜菜根中甜菜红色素进行提取,采用微波辅助提取,提取得率最高达到94.42%。目前,采用微胶囊化和添加食品添加剂对甜菜红色素进行稳定性研究。将甜菜根进行产品加工,在提高食用性的同时,也使其具有一定的生理活性功能。 Beta vulgaris L. is eaten as a vegetable. There are many cultivars in my country and there are many sources of introduction. Beta vulgaris is an edible pigment, which is used as a food pigment to improve the appearance of food. Beetroot extract contains a variety of physiologically active substances, such as beta vulgaris, polyphenols, flavonoids and organic acids. It has antioxidant, heart protection, anti-inflammatory and antibacterial effects. It has certain edible and medicinal value. The extraction of beta vulgaris pigment from beetroot is assisted by microwave-assisted extraction, with the highest extraction rate reaching 94.42%. Currently, microencapsulation and the addition of food additives are used to study the stability of beta vulgaris pigment. Processing beetroot into different ways, while improving edibility, it also has a certain physiological activity function.
