摘要
目的了解衢州市生畜肉沙门菌污染状况,为沙门菌引起的食源性疾病的防控提供科学依据。方法对2017年-2019年衢州抽样采集的生畜肉进行沙门菌检测,对结果进行分析。结果 270份生畜肉共检出沙门菌56株,分属20个血清型,检出率为20.74%。不同种类生畜肉沙门菌检出率差异有统计学意义(P<0.05),检出率最高的是猪肉(26.11%)。鲜肉、冷却肉和冷冻肉的沙门菌检出率分别为23.16%、14.71%、13.51%。4个季度沙门菌检出率分别为25.00%、24.04%、13.51%、22.22%。不同类型地点中餐饮店的沙门菌检出率最高,为40.00%。不同地区的沙门菌检出率差有统计学意义(P<0.05),其中检出率最高的是江山市和开化县(均为40.00%)。结论衢州市生畜肉沙门菌污染比较严重,畜肉种类和地区是影响沙门菌污染的重要因素,食品安全监管部门应当因地制宜采取不同防控措施。
Objective To investigate the contamination status of Salmonella in raw livestock meat in Quzhou,so as to provide scientific basis for the prevention and control of food borne diseases caused by Salmonella.Methods Salmonella detection was conducted on the raw meat samples collected from Quzhou from 2017 to 2019,and the results were analyzed.Results 56 strains of Salmonella were detected in 270 meat samples,which belonged to 20 serotypes.The detection rate of Salmonella was20.74%.There was statistical significance on the differences in the detection rate of Salmonella in different kinds of raw livestock meat(P<0.05).The detection rate of Salmonella in pork was the highest(26.11%).The detection rates of Salmonella in fresh meat,chilled meat and frozen meat were 23.16%,14.71%and 13.51%.The detection rates of Salmonella in the four quarters were 25.00%,24.04%,13.51%and 22.22%.There was statistical significance on the differences in the detection rate of Salmonella in different areas(P<0.05).The detection rates of Salmonella in Jiangshan and Kaihua was the highest(40.00%)of the six areas.Conclusion The pollution of Salmonella in raw livestock meat was serious in Quzhou City.The type and area of raw livestock meat were the important factors affecting the pollution of Salmonella.Different prevention and control measures should be taken by the food safety supervision department according to local conditions.
