摘要
采用小窖生态窖泥的工艺方法,实现了窖泥颜色为深褐色,嗅有浓郁的己酯、微臭复合香,手感柔滑,水分39.5%,pH6.5。制得生态窖泥己酸菌属的相对丰度为89%,达到老窖泥水平。通过选择优质的黄粘土、营养物质和功能菌株,调整酸碱度、温度和水分条件,解决了窖泥易脱落易退化的问题,满足了宣酒新产业园的窖泥生产需求。
Using the technology of this study, the color of pit mud is dark brown, with strong hexyl ester, slightly odorous compound fragrance, smooth handle, moisture 39.5% and pH value of 6.5. The relative abundance of caproic acid bacteria in ecological pit mud is89%, reaching the level of old cellar mud. It solved the problem that the pit mud was easy to fall off and easy to degenerate, and satisfied the demand for pit mud production in the new industrial park of Xuanjiu.
