摘要
油莎豆是块茎含油20%~30%(干基)的一年生草本油料作物。通过比较油莎豆油和9种常见植物油的脂肪酸组成,结果发现油莎豆油脂肪酸组成与橄榄油、茶籽油接近,是一种油酸含量75%~77%的天然高油酸食用油;通过比较氨基酸组成,结果发现油莎豆蛋白的必需氨基酸组成与WHO/FAO推荐蛋白质模式中的必需氨基酸组成相似;通过比较油莎豆蛋白与其他几种优质蛋白(鸡蛋蛋白、大米蛋白、马铃薯蛋白和牛乳蛋白)的氨基酸比值系数分,结果发现油莎豆蛋白与鸡蛋蛋白接近,也是一种天然高营养蛋白。该文就油莎豆脱皮、制油、加工利用等方面进行综述,以期为油莎豆的开发利用提供思路。
Cyperus esculentus is an annual oil-bearing crop with tuber oil content of 20%-30%(dry basis).By comparing the fatty acid composition of Cyperus esculentus and 9 common plant oils,it is found that the fatty acid composition of Cyperus esculentus oil is close to that of olive oil and tea seed oil.It is a natural high-oleic acid edible oil with oleic acid content as high as 75%-77%;By comparing the amino acid composition,it is found that the essential amino acid composition of Cyperus esculentus protein is similar to the essential amino acid composition in the protein model recommended by WHO/FAO;By comparing the amino acid ratio coefficient scores of Cyperus esculentus protein and other high-quality proteins(egg protein,rice protein,potato protein and milk protein),it is found that Cyperus esculentus protein is close to egg protein and is also a natural high-nutrient protein.The research progress of desquamation,oil production,machining and utilization of Cyperus esculentus is reviewed in order to provide enlightening ideas for the development and utilization of Cyperus esculentus.
