摘要
陶瓷食品包装中的有毒有害化学物质会迁移到食品中,给食品安全造成负面影响。本实验采用电感耦合等离子体质谱法,对陶瓷包装容器中重金属铅、镉、铜、锌在不同酸度、不同温度下向乙酸模拟物的迁移行为进行研究,结果表明,重金属的迁移量随着温度的升高而加快;酸度越高,迁移量越大。同时,选取3种食醋样品进行迁移分析,结果与在模拟液的迁移趋势相同。
Toxic and harmful chemicals in ceramic containers may migrate to food,which may cause undesirable effect on food.In this experiment,the transfer of heavy metals(Pb、Cd、Cu、Zn)in ceramic containers of vinegar in different conditions(different temperature,different pH value)were explored by inductively coupled plasma mass spectrometry(ICP-MS).Results indicated that the amounts of heavy metals migrated into foods increased with the temperature.The migration of heavy metals also increased with the acid strength,the higher acidity,the more amounts of heavy metals released.At the same time,three types of vinegar samples were selected for migration analysis,and the results showed the same migration trend as in the simulated solution.
