摘要
采用改良索氏提取法、微波辅助提取法和超临界CO2萃取法制备油莎豆油,对比分析所得油莎豆油的理化指标、体外抗氧化能力、紫外光谱和红外光谱。结果表明:超临界CO2萃取法油脂得率最高可达24.9%,所得油脂品质最好,油脂酸价、过氧化值最低,碘值最大。比较3种方法所得油莎豆油对羟自由基、DPPH自由基、超氧阴离子自由基清除能力,其中超临界CO2萃取法所得油脂清除自由基能力最强。紫外光谱分析表明,超临界CO2萃取法所得油脂中共轭三烯酸(亚麻酸)含量最高。3种方法所得油脂的红外光谱谱图无明显差别,可见提取方法对油脂分子结构无明显影响。
The Cyperus esculeutus oil was extracted by modified Soxhlet extraction,microwave-assisted extraction and supercritical CO2 extraction.The physicochemical indexes,antioxidant capacity in vitro,ultraviolet spectra and infrared spectra of Cyperus escu/eutus oil were compared and analyzed.The results showed that the yield of oil by supercritical CO2 extraction was the highest(24.9%),the quality of the oil was the best,the acid value and peroxide value of oil were the minimum,and the iodine value was the maximum.Among the scavenging ability of the Cyperus esculeutus oil obtained by three methods to hydroxyl radical,DPPH radical and superoxide anion radical,the scavenging ability of oil obtained by supercritical CO2 extraction was the strongest.Ultraviolet spectra analysis showed that the content of conjugated trienoic acid(linolenic acid) in oil obtained by supercritical CO2 extraction was the highest.There was no significant difference in infrared spectra of oil obtained by the three methods,indicating that the extraction method had no obvious effect on the molecular structure of oil.
