MOST people's first encounter with Jianshui County in Honghe Hani and Yi Autonomous Prefecture of southwest Chinas Yunnan Province starts from learning about the special grass shoots,tofu,and sweet potatoes that are local to that region.Grass shoots,also known as tusk herbs since the white plant looks like tusks,are a unique vegetable to Jianshui County.Its local tofu also became well-known after the popular Chinese cuisine documentary,A Bite of China,brought much attention to it.
