摘要
文章综合论述了稻谷品质变化表现的6个方面,包括外观品质、储存品质、加工品质、食用品质、卫生品质,并阐述了水分、温度、稻谷陈化、真菌毒素、重金属、农药残留、谷外糙米、虫害对稻谷多个方面品质变化的影响。通过研究稻谷品质变化有关的各影响因素,关注和改善其带来的不利影响,提前防控,为稻谷安全储存和品质控制提供参考。
This paper gives a comprehensive discussion on six aspects of rice quality change,including appearance quality,storage quality,processing quality,edible quality and sanitation quality.This text discusses the influence of moisture,temperature,rice aging,mycotoxins,heavy metals,pesticide residues,brown rice outside paddy,insect pests on variations in rice various quality.By study on the influencing factors of rice quality change,we pay close attention to the adverse effects and improve adverse effects,prevention and control in advance,Providing reference for safety storage and quality control of rice.
