摘要
为探究牦牛血发酵的最佳菌种及最优发酵条件,采用正交试验筛选出最佳的发酵菌种组合,以发酵时间、发酵温度、接种量、磷酸二氢钾添加量、麦麸添加量、菌种比例等条件为对象,在单因素试验基础上利用Box-Behnken试验设计原理,通过响应面法构建复合菌发酵牦牛血模型。结果表明:最适发酵组合为黑曲霉与酵母菌组合,在发酵时间为50h、温度为30℃、酵母与黑曲霉之比为0.4、接种量为0.3%的条件下,发酵后牦牛血可溶性蛋白质含量最高,最大预测值提高8.25%,实测值提高8.40%,且粗蛋白质含量增加,粗纤维含量减少。
The aim of the experiment was to find out the best strains and optimal fermentation conditions of yak blood fermentation.Firstly,the optimum combination of fermentation strains was selected by orthogonal test,and then using single-factor experiment under the conditions of fermentation time,fermentation temperature,inoculation amount,potassium dihydrogen phosphate addition,wheat bran addition.Further,the yak blood model was established by using Box-Behnken experimental design principle.The results showed that the optimum fermentation combination was Aspergillus niger and yeast.The content of soluble protein in yak blood was the highest,the maximum predictive value was increased by 8.25%and the measured value was increased by 8.40%when the fermentation time was 50 h,the temperature was 30℃,the yeast/Aspergillus niger ratio was 0.4 and the inoculum size was 0.3%.
