不同养殖模式对清远麻鸡的肉质性状和肌纤维特性的影响 被引量:4

Effects of Different Breeding Modes on Meat Quality and Muscle Fiber Characteristics of Qingyuan Partridge Chicken

摘要 试验研究了不同养殖模式(林下草地散养、户外放养和笼养模式)对清远麻鸡的肉质性状和肌纤维特性等指标的影响,以期能够提供良好的清远麻鸡养殖模式,并能为清远麻鸡的肉质评定标准体系提供理论基础。随机抽取三种养殖模式下30只120日龄清远麻鸡进行了肉品质检测(嫩度、系水力、色度、pH值)和肌肉组织学特性,通过对数据进行分析,比较了清远麻鸡在3种养殖模式下的肉质和肌纤维特性的差异。结果表明:林下草地散养的清远麻鸡肉质和肌纤维特性最好。 This experiment mainly studied the influence of different breeding patterns(free-range breeding,outdoor stocking and caged)on the meat characteristics and muscle fiber characteristics of Qingyuan partridge chicken,in order to provide a good breeding model for Qingyuan partridge chicken and provide a theoretical basis for the meat quality evaluation standard system of Qingyuan partridge chicken.The meat quality(tenderness,water power,color,pH value)and muscle histological characteristics of 30 120-day-old Qingyuan chickens were randomly selected from three breeding models for testing.By the analysis of the data,it compared the differences of meat quality and muscle fiber characteristics of Qingyuan partridge chicken in the three breeding modes.The results showed that the meat quality and muscle fiber characteristics were the best in the mode of free-range pastured chickens.
