裙带菜孢子叶营养成分分析及品质评价 被引量:12

摘要 【目的】明确裙带菜孢子叶的营养价值,为其深加工及高值化利用提供理论依据。【方法】根据相关检测标准,测定裙带菜孢子叶的主要营养成分、氨基酸组成、脂肪酸组成、无机元素、重金属、维生素C及岩藻黄素、甘露醇和多酚等活性物质的含量,并进行营养评价。【结果】裙带菜孢子叶的水分含量为88.50%,干物质中碳水化合物、粗蛋白、粗脂肪和灰分含量分别为52.52%、16.37%、2.22%和28.89%;共检测出18种氨基酸,其中8种必需氨基酸含量占氨基酸总量的39.27%,4种呈味氨基酸占氨基酸总量的38.03%,氨基酸评分(SAA)平均为87.05;脂肪酸中多不饱和脂肪酸含量占比为45.49%;富含钠、钾、钙等常量元素,含有一定的铁、碘等微量元素和维生素C;重金属无机砷、铅、铜和甲基汞均未检出;含有较高的岩藻黄素、甘露醇和多酚等活性物质。【结论】裙带菜孢子叶具有高碳水化合物、高蛋白质、低脂肪的特点,富含多种活性物质,营养均衡,是食用和开发保健食品的良好原料。 【Objective】The nutritious value of sporophyll of Undaria pinnatifida was analyzed and evaluated so as to provide scientific basis for its deep processing and value-added utilization.【Method】According to related testing standards,the general nutrient composition,amino acids,fatty acids composition,inorganic elements,heavy metals,vitamin C and active substances such as fucoxanthin,mannitol and polyphenol in sporophyll of U.pinnatifida were determined and evaluated,and nutrition evaluation was also conducted.【Result】The moisture content of sporophyll of U.pinnatifida was 88.50%and the contents of carbohydrate,crude protein,crude fat and ashes in dry matter were 52.52%,16.37%,2.22%and 28.89%respectively.Eighteen amino acids were detected,there were eight essential amino acids and four delicious amino acids,which accounted for 39.27%and 38.03%of total amino acids.The average amino acid score(SAA)was 87.05.The content of polyunsaturated fatty acids covered 45.49%of the total fatty acids.Major macro elements(sodium,potassium and calcium)was rich in sporophyll of U.pinnatifida,trace elements(iron and iodine)and vitamin C was also found,but heavy metals(inorganic arsenic,lead,copper and methyl mercury)were not detected in the sample.High contents of fucoxanthin,mannitol and polyphenol were also found in sporophyll of U.pinnatifida.【Conclusion】Sporophyll of U.pinnatifida contains high content of carbohydrate and protein,and low fat.It also has various active substances and balanced nutrient,therefore,it can be good raw material for eating and development of health food.
