摘要
采用全二维气相色谱-飞行时间质谱联用法(GC×GC-TOFMS)对广州某酱香系列白酒中微量成分进行检测分析,从该系列3个酒样中鉴定到有效风味化合物分别为737种、783种、794种,包含酯类、酸类、醇类、酮类、醛类、含氮类和含硫类等化合物,赋予了酱香型白酒特有的风味和风格,同时也为酒体载入了不饱和脂肪酸、吡嗪类化合物等多种对人体健康有益的生物活性成分。
The flavoring compounds in Jiangxiang Baijiu made in Guangzhou were analyzed by comprehensive two-dimensional gas chromatography/time-of-flight mass spectrometry(GC×GC-TOFMS).In three liquor samples,737,783 and 794 kinds of flavoring compounds were identified respectively,including esters,acids,alcohols,ketones,aldehydes,nitrogenous compounds and sulfur compounds.These flavoring compounds endowed the liquor with the special taste and styles.Meanwhile,they brought about bio-active ingredients beneficial to people’s health such as unsaturated fatty acids and pyrazine compounds.
