摘要
作为现代食品产业的重要助剂,食品添加剂在改善食品感官性质、防腐、保鲜等方面有着广泛应用,是中国食品工业发展的物质基础。依据国家标准,合理使用食品添加剂并不会引起食品安全问题,但是,企业受利益驱导的违规使用加之非专业化的舆论导向,导致人们对食品添加剂产生排斥与恐慌心理。据此,对食品添加剂的产生背景、范畴以及所涉及的科学知识体系进行了综述,并对食品添加剂产业未来的发展方向进行了科学预测,旨在促进食品添加剂行业乃至食品工业的高速创新发展、增强人们对食品添加剂的科学认知。
Food additives play an extremely important role in food industry.As the material and technological foundation of the development of Chinese food industry,food additives have been applied to improve foods sensory characteristics or for the sake of preservation.It does not cause any food safety issues if the application of food additives is complying with the related Chinese Standards.However,the illegal use by profit-driven enterprises and the non-professional guidance of public opinion lead to the rejection and panic of food additives.In this paper,its background,scope and scientific system are critically reviewed.Moreover,the development trends of food additive industry are also discussed.The review aims to promote the rapid innovation and development of food additives industry and food industry and to enhance the scientific cognition of food additives.
