摘要
晋西黄土高原是我国近年来新发展的一个葡萄酒产区,赤霞珠桃红葡萄酒则是该产区的一个具有代表性的特色葡萄酒。本研究以黄土高原2010年和2012年产的赤霞珠桃红葡萄酒为试材,通过感官分析结合主成分分析和聚类分析方法,从包含紫罗兰、樱桃、洋槐等在内的64个香气描述词语筛选出黄土高原赤霞珠桃红葡萄酒的香气特性感官描述符:(1)热带水果、枣、麦芽香;(2)水果糖;(3)花香;(4)红色浆果;(5)酸梅。研究为完善黄土高原产区葡萄酒的风味评价体系及该地区葡萄酒的进一步推广提供了理论依据。
The Huangtu Plateau is a newly-developed wine-producing region in China,and Cabernet Sauvignon rose wine is a typical product of this region.In this study,Cabernet Sauvignon rose wine of two different vintages was used as research objects,and through sensory analysis,principal component analysis and cluster analysis,we selected the proper sensory descriptors for Cabernet Sauvignon rose wine from64aroma descriptors.The selected descriptors are:1)tropical fruits,jujube,malt;2)fruit candy;3)flowers;4)red berries;5)sour plum.This study has important significance for the perfection of the wine flavor evaluation system and for further promotion of wine from the Huangtu Plateau.(Trans.by HUANG Xiaoli)
