摘要
以云南墨江紫米为原料提取花青素,得到最优提取方案为:将体积分数70%的乙醇溶液的pH值调节为3,按照1∶15的料液比,在60℃条件下提取30min。并研究了墨江紫米花青素的还原能力和清除DPPH自由基的能力,结果表明,墨江紫米花青素具有抗氧化活性,是一种天然的食用色素,具有较高的开发利用价值。
The anthocyanin was extracted from Mojiang purple rice in Yunnan province. The optimal extraction conditions were as follows: adjusting the pH value of the 70 % ethanol solution to 3, and extracting for 30 min at 60℃ according to the ra- tio of material to liquid of 1 : 15. We studied the reducing capacity of anthocyanins and their ability to remove DPPH radicals. The results showed that the Mojiang purple anthocyanins had antioxidant activity and was a natural food pigment with high de- velopment and utilization value.
