摘要
原产地产品的特征主要包括:产品原料来自特定地域,产品按照传统工艺进行生产,产品的质量、特色或声誉在本质上取决于原产地域地理特征,产品要在特定地域内进行生产等方面。白酒在酿造过程中,由于地理环境、酿造工艺、原料等的不同,形成了各具特色的不同风味香型。目前,白酒"原产地"意识还处于发展阶段,保护措施还不够完善,但随着白酒市场的提升,人们消费水平的提高,消费理念的改变,对白酒的原产地的重视意识也随之增强。从原产地分析鉴别的概念与发展、国内外研究进展、白酒原产地分析鉴别技术的主要方法等方面综述了白酒原产地分析鉴别技术的研究进展,并指出开展稳定同位素检测技术研究有助于白酒原产地的分析鉴别,白酒原产地的分析鉴别有助于提高行业竞争力。
The characteristics of origin product mainly include: raw materials from a specific region, product produced by traditional techniques, and the quality, features or reputation of product decided by local geographic features in nature, and products produced in the specific regions. The difference in geographic environment, liquor-making techniques, and liquor-making raw materials has formed various Baijiu products of different flavor types. At present, the concept of origin Baijiu is still in the development stage, and the corresponding protection measures are not sound. With the improvement of peoples' consumption levels and the change in peoples' consumption concept, the importance attached to origin Baijiu has enhanced increasingly. In this paper, the research progress in analysis identification technology of the origin of Baijiu was introduced, and isotope determination technology was recommended for the analysis identification of the origin of Baijiu. The analysis identification of the origin of Baijiu will help enhancing the competitiveness of Baijiu distilleries.
