Comprehensive evaluation of nutritional value of aquatic products using principal component analysis

摘要 为了综合评价桂平黄沙鳖、官垌草鱼、全州禾花鲤、钦州近江牡蛎这4种广西特色水产品的营养价值,以脂肪、蛋白质、钙、铁、锌这5个指标作为变量,探讨单指标分析法和主成分分析法分析数据的差异,并利用主成分分析法得到各类水产品的综合得分,对其进行综合评价。结果表明:单指标分析法可以确定各类水产品5个指标的含量高低,而主成分分析法能综合5个指标的信息进行分析,提取了2个主成分,累计方差贡献率达85%。同时对特色水产品综合得分进行排序,营养价值从高到低依次为钦州近江牡蛎、全州禾花鲤、桂平黄沙鳖、官垌草鱼;与普通品种比较,钦州近江牡蛎(得分为2.580)明显优于普通牡蛎(得分为1.034),全州禾花鲤(得分为—0.199)明显优于普通鲤鱼(得分为—0.939),桂平黄沙鳖(得分—0.401)优于普通中华鳖(得分为—0.453),官垌草鱼(得分为—0.818)和普通草鱼(得分为—0.804)基本一致。 To comprehensively evaluate the nutritional value of four kinds of Guangxi specialty aquatic products, such as Sand turtle, Ctenopharyngodon idellus, Rice flower carp and Crassostrea rivularis. Explored the difference of the single indicator optimization method and principal component analysis method(PCA) by using fat, protein, Ca, Fe and Zn as analysis variables. The comprehensive score of aquatic products was obtained by PCA. The comprehensive evaluation was made. The results showed that single indicator optimization method could determine the level of various indicators, while PCA could comprehensively analyze the information of five indicators. The first two principal components were identified based on PCA, accounting for 85% of the total variability. Sorting characteristics of aquatic products comprehensive score, the nutritional value from high to low followed by Crassostrea rivularis, Rice flower carp, Sand turtle, Ctenopharyngodon idellus. Compared with ordinary varieties, Crassostrea rivularis(score 2.580) was significantly better than ordinary oysters(score 1.034), Rice flower carp(score —0.199) was significantly better than ordinary cyprinoid(score —0.939), Sand turtle(score —0.401) was better than ordinary pelodiscus sinensis(score —0.453), Ctenopharyngodon idellus(score —0.818) and ordinary grass carp(score —0.804) were basically the same.
