摘要
食品分析是普通高校食品专业一门核心课程,实践性很强。该课程理论与实验课时各半、理论讲授与实验教学分离、期末闭卷笔试这些传统教学模式的实际效果不佳,已无法满足现代应用型人才培养的需要。文章重点从实验教学环节探讨了该课程教学模式的改革方法,包括减少理论课时、增加实践课时,进一步强调应用;调整实验内容,新增综合类实验;改变理论与实践分离的传统教学模式,将理论讲授与实验教学有机结合;新增实验技能考核环节,旨在锻炼学生的实际动手能力、增强学生的创新实践能力。
Food analysis is a core course for the college students majored in food science. Characterized with practice, this course highlights practical and experimental teaching to meet the demands of application-oriented talents cultivation, rather than theoretical teaching and closed-book examination. This thesis mainly focuses on experimental teaching and practice as well as explores reform method of the teaching model including decreasing theoretical class hours and increasing practical class hours. It proposes some measures: adjusting experimental content, adding comprehensive experiments, combining theoretical teaching with experimental teaching, and setting experiment skill assessment, with the aim of improving students' experimental and operational ability, and innovation and practical ability.
