摘要
纤维低聚糖是一种功能性低聚糖,因其原料来源广,具有多种益生功能、理化性质稳定等特点,作为新型食品配料日益受到重视。本文综述了纤维低聚糖的分子结构特征、理化性质、制备纯化技术、分析测定方法以及生物活性等方面的研究进展,介绍了纤维低聚糖的应用现状,并展望了其发展前景。
As a new type of functional oligosaccharide food ingredient, cello-oligosaccharides have gained extensive attention due to their abundant raw material sources, stable physicochemical characteristics and various beneficial functions. This paper reviews the general research progress of cello-oligosaccharides on its molecular structural characterization, physicochemical properties, preparation and purification techniques, analysis and detection methods and biological activities. Moreover, the current application and development prospect of cello-oligosaccharides are also introduced.
