摘要
酵素指以各种蔬菜和水果为原料,经过微生物发酵而成的发酵产物。酵素中含有蛋白酶、脂肪酶、超氧化物歧化酶等生物酶类,具有良好的保健功能。为探讨酵素发挥功能的物质基础,对9种不同原料发酵而成的酵素产品进行分析。结果表明:9种酵素产品中蛋白酶活力范围为0.041 7~0.727 1 U·m L^(-1),超氧化物歧化酶活力范围为54.994 0~76.924 6 U·m L^(-1),脂肪酶活力范围为(0.603~1.10)×10^(-3)U·m L^(-1)。此外选取其中3种酵素测定了维生素和矿物质含量,结果显示只有1种产品含有15.60 mg·kg^(-1)的维生素E,每种酵素中矿物质含量都较不均。
Enzyme is microbial fermented product containing lots of bio-enzymes such as protease,lipase,and superoxide dismutase( SOD),which is made by a variety of vegetables and fruits. For better understanding of the enzyme,the active substances of nine commercial enzymes fermented by different raw materials were detected. The results showed that the protease activity in these enzymes ranged from 0. 041 7 to 0. 727 1 U·m L-1,the superoxide dismutase activity varied from 54. 994 0 to 76. 924 6 U ·m L-1while the lipase activity were(0. 603 -1. 10) ×10 -3U·m L-1. However,vitamin E with 15. 60 mg·kg -1was only found in one product. Furthermore,the different contents of minerals in these enzymes were shown.
