二氢杨梅素对菜籽油和花生油氧化作用的影响研究 被引量:3

摘要 本研究以过氧化值(POV)和丙二醛含量为指标,分别研究了二氢杨梅素(DMY)及其增效剂对菜籽油和花生油的抗氧化性能。结果表明:DMY对菜籽油和花生油的抗氧化活性随着其添加量的增加逐渐增强,添加剂量为0.04%时表现出与TBHQ相接近的抗氧化活性,确定此添加量为最低有效添加剂量。特丁基对苯二酚(TBHQ)、抗坏血酸(Vc)、无水亚硫酸钠、乙二胺四乙酸(EDTA)、多聚磷酸钠以及柠檬酸与DMY复配,在菜籽油中,到第14 d Vc处理组和空白组POV分别为4.39 mmol/L、5.72 mmol/L,第14 d丙二醛吸光值分别为0.236、0.292;在花生油中,到第13天Vc处理组和空白组POV分别为4.15 mmol/L、5.04 mmol/L,第11 d丙二醛吸光值分别为0.184、0.215。结果为:并不是上述增效剂对DMY都有增效作用,其中Vc处理组取得了良好的协同增效作用,Vc处理组POV及丙二醛吸光值明显低于空白组。上述增效剂协同增效效果为:Vc>无水亚硫酸钠>EDTA≈柠檬酸≈多聚磷酸钠>TBHQ。因此,DMY在菜籽油和花生油中具有较好的抗氧化活性,以添加量为0.02%Vc作为增效剂时,表现出明显的增效效果。 In this paper we studied the antioxidative action of dihydromyricetin in rapesee d oil and peanut oil by measuring the peroxide value and the content of malonaldehyde (MDA). The results showed that the antioxidative activity of di-hydromyricetin in these two kinds of oil increased with its add amount. DMY with the adding amount of 0.04% had an an-tioxidative activity roughly equal to tert-butylhydroquinone , which defined as the lowest effective level of DMY. Using Tert-Butylhydroquinone, Vitamin C, Sodium Sulfite Anhydrous, Ethylenediamine Tetraacetic Acid, Sodium Polyphos-phate and Citric Acid as the synergistic agents, the peroxide values of Vitamin C treatment and the control group in rape-seed oil on the fourteenth day were 4.39 mmol/L and 5.72 mmol/L, respectively, while the absorption values were 0.236 and 0.292, respectively. The peroxide values of Vitamin C group and the control group in peanut oil on the thirteenth day were 4.15 mmol/L and 5.04 mmol/L, respectively, while the absorption values were 0.184 and 0.215, respectively. The results showed that synergistic agents mentioned above except Vitamin C have no synergistic effect on DMY. The peroxide values and absorption values of Vitamin C group were significantly lower than the control group. The sequence of the syn-ergistic effects of different synergistic agents is Vitamin C〉Sodium Sulfite Anhydrous〉Ethylenediamine Tetraacetic Acid ≈ Sodium Polyphosphate ≈ Citric Acid 〉 Tert-Butylhydroquinone.Therefore, dihydromyricetin had strong antioxidative activity in these two kinds of oil. Vitamin C showed a significant synergistic effect when added with 0.02% of oil weight.
