摘要
跟踪浓香型白酒在一年货架期内的感官和指标变化,确定不同质量成本、酒度、包装容器对指标和感官变化的影响程度。发现高质量成本、高酒度(>45%vol)的酒样在货架期内变化较小;陶瓷瓶装酒样相比玻璃瓶装酒样,在货架期内指标变化不明显,但感官更优。为货架期内的白酒质量提供依据。
The change of sensory and indicators of liquor during one year's shelf life was tracked. The effect of cost of quality, alcohol content, packaging container on change of sensory and indicators was determined. The result showed that the change will be smaller when cost of quality or alcohol content is high; liquor filled in ceramic bottle had the same indicator and a better sensory compared with liquor filled in glass bottle during one year's shelf life. Provide the basis for the quality of liquor during shelf life.
