介绍了多酚类化合物的分类及来源,综述了多酚类化合物功能的研究进展,并对所存在的问题及其今后在食品行业的发展趋势进行了探讨。
The classification and origin of polyphenols were briefly introduced,their function of polyphenol compounds research were reviewed,and the existing problems in the development of food industry and its future trend were discussed.
