摘要
以腐败鱼卷中分离出的3种腐败菌为研究对象,分析乳酸链球菌素(Nisin)、溶菌酶、ε-聚赖氨酸等生物保鲜剂对腐败菌的抑制效果.利用响应面方法对复合生物保鲜剂配方进行优化,应用Box-Behnken试验设计,分别建立3种腐败菌的抑菌率与复合生物保鲜剂配方之间的二次多项式回归方程模型,分析得出抑制鱼卷中3种腐败菌的复合生物保鲜剂配方.结果表明,优化后的复合生物保鲜剂配方对这3种腐败菌的抑菌率都在96%以上.
Three typical bacterial strains in fish rolls were isolated. An obvious suppression effect of Nisin, lysozyme and e-polylysin on spoilage bacteria was observed.Moreover, the formulation of a compound bio-preservative with the three preservatives for enhanced efficacy was optimized by response surface methodology. Three quadratic polynomial regression models were built using Box-Behnken design.This compound preservative exhibited an excellent suppression effect on three strains of bacteria and the suppression rate could reach up to 96%.
