摘要
对黑青稞主要营养成分进行了测定。结果表明:其富含膳食纤维(含量为16.39%),蛋白质和脂肪含量分别为11.59%和3.63%,水分和灰分分别为11.96%和2.04%;含有10种矿物质元素,其中Zn、K、Mg、Fe和P含量较高,分别为45.43、6 213.08、1 612.90、126.08和4 884.14 mg/kg,Na含量较低为116.99 mg/kg;18种氨基酸齐全,总量为11.44%,8种人体必需氨基酸含量为3.55%;B族维生素含量丰富,总量为9.53 mg/100 g,其中烟酸含量高达8.86 mg/100 g。黑青稞中Zn、K、Mg、Fe和P 5种矿物质元素、总氨基酸和B族维生素含量均显著高于白青稞,K/Na值为白青稞的1.73倍。
The nutrient ingredients of black hulless barley were analyzed,and the results showed that it is rich in dietary fiber of 16. 39%. The content of protein,fat,moisture and ash was 11. 59%,3. 63%,11. 96% and2. 04%,respectively. Among ten kinds mineral element,the content of Zn,K,Mg,Fe,P reached up to 45. 43 mg /kg,6213. 08 mg / kg,1612. 90 mg / kg,126. 08 mg / kg and 4884. 14 mg / kg,Na was as low as 116. 99 mg / kg. Black hulless barley has 18 kinds of amino acids,total amino acid and essential amino acid was 11. 44% and 3. 55%. In additional,black hulless barley was rich in vitamin B of 9. 53 mg /100 g,and niacin was the highest of 8. 86 mg /100 g.Compare with hulless barley,black hulless barley had a significantly higher level of Zn,K,Mg,Fe,P,amino acids and B vitamins. Thus,black hulless barley is a kind of crop with high nutrition value. The comprehensive determination and analysis of its nutrient ingredients is important to the use of resources and the products further developments.
