摘要
酯化酶是浓香型白酒生产上的重要酶类。概述了浓香型白酒生产中酯化酶的研究现状,讨论了酯化酶的反应特性、酯化酶技术在酿酒行业中的应用情况;同时,对当前酯化酶研究中存在的问题及其发展前景进行了讨论与展望。
Esterifying enzyme plays an important role in the production of Nongxiang Baijiu. In this paper, the present research situations of esterifying enzyme were reviewed, including its reaction properties and its application in the production of Nongxiang Baijiu. Meanwhile, the prospects and the problems of esterifying enzyme in the research and in the application were discussed.
