摘要
在界定食品供应链质量安全风险传导概念的基础上,提出食品供应链质量安全风险传导系统的结构模型;结合食品的特殊性,深入解析食品供应链质量安全风险传导系统的主要构成要素,包括风险源、传导阈值、传导载体、传导路径、传导节点、传导宿体以及风险调控过滤器,并揭示其风险度量的函数关系式。
Based on defining the concept of food quality safety risk conduction in food supply chain, the paper puts forward a structural model of food quality safety risk conduction system. Combining the particularity of food, the paper does deep analysis of component factors of food quality safety risk conduction in food supply chain, including risk source, conduction threshold, conduction carrier, conduction path, conduction nodes, conduction host and risk control filter, and puts establishing functional relation of factor risk. The ressearch re- sult lays a theoretical foundation for the prevention and control of food quality safety risk in food supply chain, and has certain theoretical and practical guiding meaning.
