摘要
杨梅在充分预冷后(果心温度达(0±0.5)℃),分别采用不同厚度泡沫箱、塑料气调箱结合冰块(250 m L)、生物蓄冷剂(125 m L)等不同方式组合包装,研究模拟物流配送环境条件下(27~30℃,相对湿度60%~70%),各式包装内杨梅果实的升温特性及出库24 h、36 h生理及感官品质的变化。结果表明:蓄冷效果好的包装能保持模拟物流配送杨梅较好的品质,3.2 cm厚的泡沫箱(1.5 kg/箱)结合4个生物冰袋的蓄冷时间可达36 h,能维持杨梅果实较好的感官品质及硬度,膜脂过氧化程度较低,常温下40 h仍具有商品性。
Waxberries were packaged by different combinations of packaging methods including different thickness of bubble chambers or plastic CA box combined with ice (250 mL) or biological refrigerating agent (125 mL) respectively after fully pre cooling (the core temperature was (0+0.5) ℃), under the conditions of simulated transportation (27~30 ℃, RH 60% ~70%), the temperature rising characteristics and the physiology and sensory quality of waxberries were detected in 24 h and 36 h after precooling. The result showed that, the packaging with good cold storage effect could keep good quality of waxberries during simulation logistics distribution. The cold storage time of 3.2 cm bubble chamber combined with biological refrigerating agent could up to 36 h, and the sensory quality and hardness of waxberries were kept welL the degree of membrane lipid peroxidation was lower, and the waxberries also had commercial quality after 40 h normal temperature storage.
