摘要
研究了高压脉冲电场技术对橙汁中大肠杆菌的杀菌动力学模型。以橙汁中普遍存在的大肠杆菌作为研究对象,分析各物理量(电场强度、处理时间、初始温度)及它们的交互作用对大肠杆菌的杀菌效果。首先,采用场发射扫描电子显微镜观察高压脉冲电场对大肠杆菌细胞的破坏作用,然后通过Weibull模型对试验数据进行拟合,得到大肠杆菌的杀菌预测模型,并通过独立试验数据验证模型的偏移因素和准确度因素。结果表明,Weibull模型可用于预测高压脉冲电场技术对橙汁中大肠杆菌的杀菌效果。
The aims of this study were to study the inactivation kinetic model of Escherichia coli in orange juice by pulsed electric field (PEF) treatment. The lethal effects of various PEF processing parameters (electric field intensi- ty, treatment time, initial temperature) were analyzed to evaluate the efficiency of PEF on the inactivation of Esche- richia coli which was common in orange juice. The results from field emission scanning eleciron microscope (FESEM) imaging of Escherichia coli indicated that the PEF treatment induced the destruction of cell membrane structures. The inactivation kinetic model of Escherichia coli was obtained by fitting with Weibull model, and the model was validated by bias factor and accuracy factor. This research suggested that the Weibull model was suitable for predicting the survival ratio of Escherichia coli in orange juice treated by PEF.
