摘要
味精,白色颗粒状晶体,与硫酸镁晶体极其相似,肉眼很难辨别。利用微波加热使硫酸镁晶体失去结晶水变成白色粉末,与味精颗粒得以区分。此外,硫酸镁在失去结晶水的同时,其溶于自身结晶水中,而使大部分硫酸镁和少部分味精颗粒聚集在器皿底部,从而得以判断味精中是否有硫酸镁存在。
Monosodium glutamate is white and granular crystal,extremely similar to magnesium sulfate crystal.It's difficult for naked eyes to distinguish them.In this paper,magnesium sulfate is distinguished from monosodium glutamate based on that magnesium sulfate loses crystal water and changes into white powder through microwave heating.Moreover,magnesium sulfate dissolves into its own crystal water while losing water,so that a great mass of magnesium sulfate and a small percentage of monosodium glutamate gather together at the bottom of vessel.Thus it is concluded whether there's magnesium sulfate in monosodium glutamate or not.
