年龄和育肥对苏尼特羊肝脏组织脂肪酸组成的影响 被引量:4

Effects of age and fattening on the fatty acid composition in the liver tissue of the Sunite sheep

摘要 为了研究年龄和育肥对苏尼特羊肝脏组织脂肪酸组成的影响,试验从苏尼特左旗种羊场放牧群中选取当年、1.5岁和成年羯羊各6只,从育肥群中选取6只肥羔,进行屠宰测试,并采集肝脏组织样品,同时采集草场混合牧草和育肥饲粮样品,并分别检测其脂肪酸组成。结果表明:放牧饲粮的n-6多不饱和脂肪酸(n-6PUFA)/n-3多不饱和脂肪酸(n-3PUFA)为2.205,低于育肥饲粮(8.779)。随着年龄的增长,苏尼特羊净肉率和胴体脂肪率极显著提高(P<0.01),但在1.5岁羯羊与成年羯羊之间上述指标无显著差异(P>0.05)。肝脏组织含有丰富的n-3PUFA,其中尤其是二十碳五烯酸(EPA)和二十二碳六烯酸(DHA)组成仅次于大脑组织,比肌肉和体脂高出很多,但随其年龄的增长显著下降(P<0.05);随着年龄的增长,肝脏组织中链饱和脂肪酸(MCFA)(P<0.01)和C18∶0(P<0.05)组成明显上升,相反C18∶1c9组成下降(P<0.01);n-6PUFA/n-3PUFA(P<0.01)和饱和脂肪酸与(S)/不饱和脂肪酸的比值(U)(P<0.01)上升。育肥使苏尼特羊肝脏组织中的MCFA(P<0.01)和C18∶0(P<0.05)组成上升。相反C18∶1c9组成降低(P<0.01);n-3PUFA组成下降(P<0.05),同时使n-6 PUFA/n-3 PUFA提高(P<0.01)。表明放牧饲粮具有n-3PUFA营养特性,而育肥饲粮则具有n-6PUFA营养特性;苏尼特羊早期(周岁左右)生长发育速度显著高于后期,而且体脂沉积量也最佳;苏尼特羊肝脏组织具有n-3PUFA营养特性,但年龄和育肥使其n-3PUFA营养特性明显降低。 To investigate the effects of age and fattening on the fatty acids composition in the liver tissue of the Sunite sheep,six for each of the wethers at the year,1. 5 years of age and adult age were selected from the grazing groups of Sonid Zuoqi sheep stud,while six fat lambs were also selected from the fattening group. The slaughter tests were conducted to collect the liver tissue samples,while the mixed forages from the meadow and fattening diet samples were also collected to detect their fatty acid composition,respectively. The results showed that: the ratio of n- 6 polyunsaturated fatty acids( PUFA) to n- 3 PUFA in the grazing diet was 2. 205,which was lower than in the fattening diet( 8. 779);the net meat percentage and carcass fat percentage in the Sunite sheep were highly significantly increased( P〈0. 01) with the increase of the age,but there was no significant difference( P〈0. 05) in the above indexes between the 1. 5- year old and adult wethers. The n- 3 PUFA were enriched in the liver tissue,especially the eicosapentaenoic acid( EPA) and docosahexaenoic acid( DHA) composition in the liver tissue was second only to the brain tissue,and much higher than that in the muscle and body fat,but significantly decreased( P〈0. 05) with the increase of the age. With the increase of the age,the composition of medium- chain saturated fatty acids( MCFA) and stearic acid( C18: 0) in the liver tissue was highly significantly( P〈0. 01) and significantly( P〈0. 05) increased,respectively; on the contrary,the oleic acid( C18:1C9) composition was highly significantly decreased( P〈0. 01). The ratios of n- 6 to n- 3 PUFA and saturated to unsaturated( S / U) fatty acids were all highly significantly increased( P〈0. 01). The MCFA and stearic acid composition in the liver tissue was highly significantly( P〈0. 01) and significantly( P〈0. 05) increased with fattening in the Sunite sheep,respectively; on the contrary,the oleic acid composition was highly significantly decreased( P〈0. 01); the n- 3 PUFA composition was significantly decreased( P〈0. 05),while the ratio of n- 6 to n- 3 PUFA was highly significantly increased( P〈0. 01). The results indicate that the grazing diet has the nutritional properties of n- 3 PUFA,and the fattening diet has the nutritional properties of n- 6 PUFA; the speed of growth and development in the Sunite sheep at early period( at the age of one year old or so) is significantly higher than that at the late period while the amount of body fat deposition is the best; the liver tissue of the Sunite sheep has nutritional properties of n- 3 PUFA,but its nutritional properties of n- 3 PUFA is obviously decreased by age and fattening.
