摘要
目的了解邯郸市2006-2013年食品安全风险监测中食品添加剂的污染水平和趋势。方法利用GB/T 5009-2003《食品卫生检验方法理化部分》检测方法、《食品中化学污染物及有害因素监测操作程序》对所采集样品进行检测,统计数据,分析2006-2013年食品添加剂污染状况。结果二氧化硫超标率11.4%,超标现象严重的食品为蜜饯;亚硝酸盐阳性率最高为84.4%,但超标现象并不严重。安赛蜜的合格率99.0%,其超标的样品也为蜜饯。合成色素的阳性率、超标率都很低。结论邯郸市2006-2013年食品添加剂监测数据显示,食品添加剂的使用仍然存在问题。蜜饯、开心果、食用菌超标严重,应加强这三类食品中添加剂的监督监测管理;应不断完善食品添加剂监测方法和制度;监管食品添加剂的职能部门应加强对食品添加剂生产企业和食品加工企业的监督管理,使人们能够吃上安全放心的食品。
Objeetive To understand the contamination level and trend of food additives in food safety risk monitoring of Handan city during 2006 -2013. Methods Using the detection method of GB/T 5009 -2003 Inspection of food hygiene physicochemical part , and Chemical pollutants and harrnful factors in food monitoring procedures to detect samples been collected, done statistics, analyzes the pollution situation of food additives during 2006 - 2013. Results Over standard rate of sulfur dioxide was 11.4% , serious over standard sample was preserved fruit; the positive rate of nitrite was up to 84.4% as the highest, but over standard phenomenon is not serious. Pass rate of acesulfame was 99%, over standard sample was preserved fruit either. Positive rate and over standard rate were both very low of synthetic pigment. Conclusions The food additives monitoring data of Handan city during 2006 - 2013 shows there is still problem exist in the usage of food additives. Preserved fruit, pistachio nuts and edible fungus exceed the standard seriously, should strengthen the additives supervision and monitoring management and of these 3 kinds of food ; Should improve the food additive monitoring method and system constantly; Food additive supervision functional departments should strengthen supervision and management of food additives production enterprise and food processing enterprises, enable people to eat safe food.
