摘要
利用好食脉孢菌对脱脂葵花籽粕进行固态发酵生产具有较高活性的抗氧化肽,从而提高葵花籽粕的利用价值。对影响固态发酵的培养基组成及发酵条件进行了研究。确定最佳培养基条件为:脱脂葵花籽粕2 g,麸皮2.5 g,料水比1∶2.5,pH 7.5,MgSO4加量0.02 g;较佳的发酵条件为:接种量1.0×106个/g,发酵时间5 d,发酵温度30℃。在最佳条件下,发酵产物蛋白质溶出率为27.2%,抗氧化活性为186.37 U/mL。
Neurospora sitophilo was applied to ferment the defatted sunflower seed meal to produce antioxidant peptides so as to improve the utilization value of sunflower seed meal. The culture media composition and fermentation conditions were studied. The results showed that the optimal culture media composition was obtained as follows : defatted sunflower seed meal 2 g, bran 2.5 g, solid - liquid ratio 1 : 2.5, pH 7.5 and MgSO4 dosage 0.02 g;the optimal fermentation conditions were obtained as follows:inoculation dosage 1.0 × 106 cells per 1 g material,fermentation temperature 30℃ and fermentation time 5 d. Under these conditions, the dissolution rate of protein and antioxidant activity of the obtained product were 27.2% and 186.37 U/mL,respeetively.
