摘要
以野生血苋菜为原料,用酸性食用乙醇溶液浸提制得血苋菜色素.并对其理化性质进 行了研究,结果表明;该色素水溶性好,在酸性条件下具有较好的稳定性,是一种价廉易得、安 全可靠、使用方便的天然植物色素.
Amaranthus tricolor Pigment was extracted by means of soaking wild amaranthus tricolor into drinking ethyl alcohol an it's physical and chemical properties was analyzed. The result showed that this Pigment, under acid condition, is relatively stable and has high water solubility. It is a cheap, safe and reliable as well as convenient natural Pigment.
