摘要
目的制备具有类超氧化物歧化酶 (SOD)活性的玉米功能短肽 ,并与SOD进行活性比较。方法以玉米蛋白粉为原料 ,采用酶水解的方法 ,经SephadexG 2 5分离 ,以TNBS法测定各组分的平均链长 ,用邻苯三酚自氧化法测定各组分的抗氧化活性 ,同时与SOD进行活性比较。结果含有 2~ 6个氨基酸残基的玉米功能短肽 ,对邻苯三酚自氧化具有较好的抑制作用 ,玉米功能短肽 (浓度 10mg ml)的抑制率为 2 1.78%。
PurposeThe aim is to prepare corn functional oligopeptides, which has SOD like activity, and to compare the product with SOD. MethodsCorn functional oligopeptides were prepared by using a type of alkaline protease. The hydrolysis degree (DH) , antioxidative effects and molecular weight distribution were examined.ResultsCorn functional oligopeptides had high ability in inhibiting selfoxidation of pyrogallol, and the inhibition rate is up to 21.28% at the concentration of 10mg/ml .ConclusionCorn functional oligopeptides have antioxidative and SOD like activity.
