摘要
目的了解济南市主要消费食品中铅、镉的污染水平,为开展食品中铅、镉污染状况的评价和预警提供基础数据。方法 2010年-2012年按照山东省及济南市食品污染物监测计划进行采样,实验部分采用石墨炉原子吸收法测定铅和镉,根据国家相关标准进行评价。结果 3年共监测铅512份样品,超标率0.78%,主要是粮食中小麦;镉454份,超标率1.1%,主要是水产品中双壳类、腹足类、头足类和小麦。结论济南市食品铅镉污染水平较低,但在各类食品中重金属都有不同程度的检出,需要加强监测,控制污染,保障人群的健康。
Objective To understand the pollution levels of lead and cadmium in main food of Jinan, in order to provide a reliable basis for carrying out the evaluation and early warning of lead and cadmium pollution in food. Methods According to the food contaminants monitoring plans of Shandong province and Jinan city, the food samples were collected to detect the lead and cadmium by graphite furnace atomic absorption in the experimental part, then the detection results were evaluated according to the relevant national standards. Results Lead was detected in 512 samples in 3 years, the over - limit rate was 0.78%, mainly in wheat. While cadmium was detected in 454 samples in 3 years, the over - limit rate was 1.1%, mainly in bivalves, gastropods, cephalopods of the aquatic products and wheat. Conclusion Lead and cadmium contamination level is low in food of Jinan, but heavy metals were detected more or less in various types of food. So it need to further strengthen the monitoring and control of pollution, to protect the health of the population.
