摘要
切割处理激发鲜切果蔬发生氧化突发,从而诱导活性氧代谢发生紊乱。本研究以鲜切莴苣为实验材料,利用外源乙烯和茉莉酸甲酯(MeJA)处理鲜切莴苣,通过分析H2O2和O-2·两种活性氧以及超氧化物歧化酶(SOD)、过氧化物酶(POD)、过氧化氢酶(CAT)、抗坏血酸过氧化物酶(APX)等酶活性的变化,研究这两种外界信号分子对鲜切莴苣活性氧代谢的影响。结果表明:乙烯和MeJA处理可提高鲜切莴苣中的SOD、POD、CAT和APX等抗氧化物酶的活性,同时,使H2O2含量和O-2·产生速率显著下降。在两种处理中,MeJA的作用效果更明显。
Fresh-cut processing stimulates the oxidative burst of fresh-cut fruits and vegetables so as to promote the reactive oxygen metabolism disorders.To clarify the effect of exogenous ethylene and MeJA treatments on reactive oxygen metabolism in tissue of fresh-cut lettuce,the change of two oxidative oxygen including H2O2 and O^-2 and the activity of super oxygen dehydrogenises (SOD), peroxidase ( POD), catalase (CAT), ascorbate peroxidase(APX) were measured after being treated with exogenous ethylene and methyl jasmonate(MeJA) .The results shewed that the activity of SOD, POD,CAT and APX was promoted and the contents of H2O2 and formation rate of O^-2 were inhibited after ethylene and MeJA treatmentAmong the two treatments,the effect of MeJA was more remarkable.
