摘要
利用热泵进行北极虾的干燥试验研究,探讨干燥空气的温度、相对湿度和流速对北极虾干燥速度、产品的物理和感观特性及干燥能耗的影响。试验结果表明,干燥空气温度是影响热泵干燥北极虾速度、能耗、复水率和感观特性的主要因素;空气相对湿度对干品收缩率影响最大,对干燥速度、能耗和感观特性影响次之;空气流速除对复水率的影响较空气相对湿度较大外,对其余各指标影响相对最弱。在本试验范围内,干燥空气温度为35℃,空气相对湿度为20%,空气流速为1.5m/s的工艺下干燥北极虾,可取得较好的干燥效果。
In this paper, shrimp Pandalus borealis drying by heat pump technology was studied to elucidate effects of temperature, relative humidity and velocity of air on drying rate, product physical properties, sensory characteristics and energy consumption. The results showed that the air temperature was found to be the dominating factor impacting drying rate, energy consumption, rehydration rate and sensory characteristics. The shrinkage rate of the dried shrimp was most affected by air relative humidity which influenced drying rate, energy consumption and sensory characteristics. Besides stronger effect on rehydration rate than air relative humidity, air velocity showed little effect on other indicator. In the experiment, better shrimp drying was observed under conditions of air temperature of 35℃ air relative humidity of 20% and air velocity of 1.5 m/s.
