摘要
本为应用气相色谱法,对典型植物油脂和动物油脂的脂肪酸组成进行了测定。结果发现,植物油脂与动物油脂中的肉豆蔻酸含量存在明显差异。地沟油往往是既含有植物油又含有动物油的混合油脂,对照实验证明地沟油中肉豆蔻酸含量有别于植物油和动物油。故可通过此法对未知油品的特征性脂肪酸肉豆蔻酸含量进行测定,从而鉴别地沟油、合格食用油与掺入地沟油的食用油。
Measured the fatty acids composition of typical vegetable oils and animal oils by gas chromatography. The results shows that the myristic acid content in vegetable oils and andanimal oils are significantly different.Hogwash oil often contain both vegetable oil and animal oil. Control experiments proved myristic acid content in the hogwash oil is different from the vegetable and animal oils.So, we can identify hogwash oil, qualified edible oil and edible oil mixed with hogwash oil through measure contents of myristie acide in unknown oil by this methods.
