摘要
着重介绍天然食品防腐剂的种类(包括动物性来源、植物性来源、微生物来源等)以及在食品工业中的应用范围,简要陈述其防腐机理、合理使用及存在问题,进一步说明防腐剂有广阔的应用和发展前景。
This paper introduced the kinds of natural food preservations and application in food industry, including animal sources, plant sources, and other types of microbial origin, briefly stated the anticorrosion mechanism, the reasonable use and the existing problems. It illustrated that natural preservatives had intensive application and a development future.
