摘要
目的了解深圳市部分食品中食品添加剂使用现状。方法 2011年深圳市食品安全风险监测对全市7个区农贸市场、超市、批发市场、餐厅酒楼、职工食堂部分食品中食品添加剂进行监测。监测项目包括防腐剂、甜味剂、护色剂、着色剂、以及部分禁用添加剂。结果超标的食品添加剂主要为甜蜜素在泡菜中超标率为16.70%,其次为凉拌菜超标率为4.20%;糖精钠在泡菜中超标率为2.78%;亚硝酸盐在凉拌菜中有1份超标,超标率为2.08%;甲醛在水发产品中超标率为14.29%。结论深圳市部分食品中食品添加剂过量、超范围使用仍然存在,应该加以重视。
Objective To investigate the current use of food additives in food in Shenzhen. Methods In 2011, a sampling survey was conducted on the food additives in farming products market, wholesale markets, supermarkets, restaurants, staff canteens in seven districts of Shenzhen. Monitoring items include preservatives, sweeteners, coloring agents, dying agents, and some banned additives. Results The first excessive food additive is cyclamate used in pickled vegetables, with the superscalar rate of 16. 70~.%0, followed by cold dishes with the superscalar rate of 4.20%~ the superscalar rate of sodium saccharin in pickled vegetables is 2.78%0, nitrite in cold dishes is 2.08% ; and formaldehyde in aquatic products is 14.29%. Oonclusion Close attention should be paid to the problems of food additives in some foods in Shenzhen.
