摘要 介绍了谷物中的真菌毒素污染的主要种类、已有的限量标准、检测技术,概述了真菌毒素对人和动物的毒害作用。真菌毒素一直以来都是谷物的最大污染源,影响经济和农业生产,严重威胁动物和人的安全,如何快速检测谷物中真菌毒素的含量,制订相关的限量标准就十分必要。阐述了不同的真菌毒素检测方法,讨论了真菌毒素研究领域目前存在的问题,通过比较国内外不同的限量标准,找出存在的差距,并指出了今后真菌毒素在检测技术和安全评价方面的研究方向。 This article introduced the main species of mycotoxins in cereals, the existed limitation and the detecting technologies, and overviewed the poisoning effect of mycotoxins on human and animals. Mycotoxins were always the max pollute of cereals, affected economy and agricultural manufacture, severely threatened the safety of human and animals. It was imperative to build fast detecting methods and formulate correlative limitation. Elaborated several different detection technologies of mycotoxins, discussed the problems in the field of mycotoxin detection. Found the gap between inland and foreign by comparing the diverse limits, and pointed out the research directions of mycotoxins in detecting technology and safety assessment.
