摘要
对Folin-Ciocalteu法测定果酒中总多酚含量进行了研究。经过一系列优化实验,提出Folin-Ciocalteu法的最适测定程序为1.0mL样品提取液中依次加入4.0mL水、2mL显色剂和3mL15%碳酸钠溶液,摇匀,30℃下显色30min,在760nm波长下测定吸光度。采用此方法对水蜜桃果酒中添加没食子酸,平均回收率为97%~99.5%。
Folin-Ciocalteu determination of total polyphenol in fruit wine was studied.After a series of optimization experiments,the best determination procedure of Folin-Ciocalteu method was put forward,that was,4.0mL water,2.0mL visualization regant and 3.0mL 15% sodium carbonate solution were added into 1.0mL extract of samples,then blended it,and measured its optical absorption value at 760 nm after coloration for 30min at 30℃.Under this procedure,average recovery rate of gallic acid in juicy peach fruit wine was 97.0% to 99.5%.
