摘要 番茄皮渣是生产番茄酱(汁)后的废弃物,主要由种子和果皮组成。作者分析了种子和果皮的主要成分,矿质元素含量,蛋白质氨基酸组成、测定结果表明,种子含脂肪24.55%,可用以开发番茄籽油;脱脂种籽蛋白质含量达到37.57%,富含谷氨酸、天门冬氨酸、赖氨酸等。番茄皮渣富含钙、镁、磷、钾、钠等矿质元素。番茄种籽是开发高钙。高赖氨酸蛋白质的理想原料,对各类食物具有双重强化作用;番茄果皮的膳食纤维含量69.79%,是开发高钙型膳食纤维的潜在原料. Tomato pomace consisting principally of seeds and skins is the processing waste of tomato pastes(juice).The seeds and skins are analyzed for their content of protein,total sugars, fat,ash,dietary fiber, amino acids and several minerals.The seeds contained about 24.55% fat which could be developed as edible oil,defatted seeds contain about 37.57% protein high in glutamic acid,aspartic acid and lysine etc.The pomace is rich in Ca,Mg,P,K,Na.Tomato seeds are the ideal materials of developing protein high in Ca and lysine,it would have double fortifying functions to cereals.The skins contain about 69.79% dietary fiber,So they would be a potential source of developing dietary fiber high in Ca.
