摘要
豉香型白酒产于我国珠三角,具有突出的豉香味而得名,但豉香型白酒中乙酸乙酯含量偏低。所以本课题对豉香型白酒酿造过程中功能微生物进行了筛选,得到一株高产乙酸乙酯的酵母菌株,对该产酯酵母进行了理化性能测定,并在生产中进行了初步应用,取得了较好的应用效果。
The douche-flavor liquor produced in Chinese Pearl River Delta Region is well-known for its outstanding douchi fragrance; however, its ethyl acetate content is low. In this study, screening of the strain producing high ethyl acetate content was conducted, and a high yield of ethyl acetate yeast strain was obtained. The physiochemical characteristics of this strain were determined. In additional, the yeast was applied in the pilot scale. The results showed that the performance of fermentation was good.
