摘要
人工老窖是近十多年来发展起来的一项新技术。它对提高我国名优白酒的产量发挥了重要作用。本文较系统地阐述了人工老窖的机理,窖形的设计,人工窖泥的培养和建窑的方法。在生产实践中具有一定的指导意义。
Artificial fermentation cellar is the late technology developed inlast decade and more, and it has played an imporlant role in raising the output ofthe famous and quality liquor products. this article deal with systematically theartificial fermentation cellar mechanism, the design of cellar shape and size, thecultivation technology of artificial cellar--mud and the way of building cellar, andmeans some in production pratice.
