摘要
对紫桑椹紫色素的理化性质进行了详细的研究,结果表明,该色素水溶性好,耐热性和耐光性较好,盐、蔗糖、淀粉、金属离子(Fe3 + 除外) 对色素的色泽无不良影响,柠檬酸有增色效应.
The physical and chemical properties of the Fructus mori's violet pigment were studied. The results indicated that the solubility, anti photo and anti tempertature were good. Salt, sucrose, starch, metal ions(except Fe 3+ )were less influence on the violet pigment. Citric has colour enhancement effect.
