摘要
测定了大豆萌发过程中具有护肤功效的异黄酮、皂苷、多糖及烟酸、VB6、VC、游离生物素4种维生素质量分数的变化。结果表明,萌发能显著提高大豆中活性成分的质量分数,萌发72 h时,总异黄酮、异黄酮苷元、皂苷、还原性多糖、烟酸、游离生物素的质量分数均达到较高水平,比未发芽大豆的质量分数分别增加了40%,192%,6.87%,133.3%,50.4%,75.3%。利用大豆萌发过程可有效提高自身生物学效应,并为发芽大豆在护肤化妆品中的应用提供数据信息。
Change of mass fraction of the isoflavones,saponins,polysaccharides,niacin,VB6,VC and biotins that possess skin-care effect during the germination process of soybean was determined.Results showed that mass fraction of the skin-care active ingredients significantly increased during the germination process.After germination for 72 h,mass fraction of the total isoflavones,isoflavone aglycones,saponins,reductive polysaccharides,niacin and free biotins all achieves a higher level.As compared with that before the germination,the skin-care active ingredients increase by 40%,192%,6.87%,133.3%,50.4% and 75.3% respectively.Obviously,the germination process of soybean can effectively raise its biological effects.This conclusion is useful for the application of the germinated soybeans in skin caring products.
