摘要
花色苷是一种存在于高等植物中重要的水溶性色素,具有重要的生物活性,可应用于食品、药品和化妆品中。因其种类繁多、来源广泛、安全无毒并有一定的营养和保健功效而引起国内外的广泛关注,具有十分重要的开发价值和广阔的应用前景。近年来,有关花色苷的研究一直是国内外研究的热点。本文对花色苷的分离纯化及定性定量方法进行了综述。
Anthocyanin in plants is a kind of natural water soluble pigment and exhibiting bioactive functions.It can be used in food,pharmacy and cosmetics.It is also used world-wildly because of its safety,nutrition and potential functionalities.Researches on anthocyanin have been increased rapidly both domestic and world wide in recent years for its good prospective application.This paper reviewed the isolation,purification,qualitative and quantitative analysis methods of anthocyanin.
