摘要
白酒属于传统产业,而且一直以来均主要采用人工传统生产方式生产。科学技术不断进步和发展,必然也会逐步推动传统白酒产业生产的机械化发展。台湾白酒制造业和日本烧酒生产的机械化水平都相当高。中国白酒的机械化发展必须抓住发展契机,创建研发团队,以制曲、发酵、蒸馏、勾调机械化研究为主,分项、分段研究,协调链接、逐步攻克,最终实现中国白酒生产的机械化。
Liquor-making indutry belongs to traditional industry and manual work is always the main production mode. However, with rapid development of science and technology, mechanized liquor-making will gradually play more important roles in liquor making. The mechanized levels of liquor-making in Taiwan and of sake-making in Japan are quite advanced. The mechanized development of Chinese liquor must hold the opportunities by establishing development teams and focusing on the mechanization of starter-making, fermenting, distilling and blending, and finally realize mechanized liquor-making in China.
